I hear ya! Trout and eggs is a fav breakfast of mine .Smoked Trout with onion on crackers with Horseradish sauce is another tasty meal.Perch,Bluegill or Crappie fried in beer batter with Tabasco sauce is another !

Thanks John, I even like to put this recipe next to some eggs for breakfast as well....Especially when it's raining like this morning and my fishing is delayed! LOL

Thanks Dick...it's a good change of taste for somebody that eats as much fish as I do....And if you're the guy that likes spicy, you can kick these blackened filets up a notch by adding more cayene pepper to your liking..........I do bluegill filets the same way and they are very good!
