Jen, the recipe is simple:
2 tbspn of paprika
1 cup of all purpose flour
As much garlic and onion powders for taste
1l2 tspn of dried dill
1/2 tspn of dried oregano
1l2 tspn of dried chive
1l2 tspn of dried thyme
1l2 tspn of dried peppercorn for kick
As much as cayan pepper powder you like for a heavy kick to the tongue
2 eggs, beaten before pouring over the flour mix
1 tspn of seasalt as optional flavoring..I have enough flavors to compensae for the salt and reduce the total sodium content.
1 small beer of your chose. Corona so far gives a light taste. Miller gives a strong taste.
Pour just enough beer to make a nice thick batter, but not runny. Thick enough for the batter to stay on your finger even with a nice clump sticking on it. Only use enough batter to smear onto the filets to very light coat it. If you like thicker layer, use more. My kids like it a lot. I like it a little less batter.
For a good crunchy kick, add a coat of tempura bread crumb on the outside for a great texture.
Good going Leo there is more to fishing than catching fish that is just the beginning then there come prep and of coarse the eating. It all part and all equally important.
That's cool....all three of my grandchildren love fried gills.....I like to see the kids enjoy fishing from the catch all the way to the pan.........I'm able to teach them ethical fishing early so they make good choices when it's their time....
Indeed they did Jeffrey. They want to eat more but they were stuffed. They want to fish again for more fish tacos later. Still have plenty left in the freezer.
