one way I like todo about any fish at times;; is to cook them on a bbq grill.  1 big piece of alum. foil;; wax it down with butter;; pour some dales sauce( its a type of soy sauce; great tasting to!) onto the foil;; lay the fillets down; pour  a little more dales sauce on the fillets;( this way; its on both sides of the fillets) add salt n pepper; ( sometimes i also add a bit of lemon juice;; or a quarter slice of orange  for a different taste)  wrap the foil into a tight tent; place on the grill;; cooks in about 20 minutes

1st I'd like to say to all those people who don't eat catfish because they can be strong and fishy tasting there is nothing like eating a pond raise pellet fed catfish. No fishy strong fishy taste just a mellow chunk of meat. I dip my catfish chunks in egg then a flour batter. I wish I had a recipe I can tell you whats in it but not how much I just throw it together. Ingredients: Flour,Baking Powdert, Kosher Salt, Black Pepper, Lowry Season Salt,Paprika, Garlic Powder,Onion Powder, Very little bit of Anise seed. I like a good oil get oil hot put fillets in hot oil 350. Cook till fish float for a few minutes. Turn over in oil let cook a few more minutes. Pull fillets out put on a paper towels. Them pond raise catfish will excell you'll know after your 1st bite. Good eating............

Wow that one is big enough to get the head meat off of it, two chunks of meat from the sides of the upper head .  My buddy likes to blacken catfish fillets , do it outside because of the smoke, I like fillets or steaks , cooked like Keith does it, catfish is catfish but here is the pecking order for catfish in my book 1.  Flatheads  ,  2.  Channel Cats  3.  All others are not fit to eat blues , bullheads, pollywogs , ect., ect. ect.     LOFR

I like to fillet cats that size then I cut out the dark mid line and the fat yellow parts. I cut the fillets into small nuggets or fingers, dip in buttermilk, sprinkle with creole seasoning ,roll in corn meal and deep-fry. My family didn't eat much catfish till we started making them this way.

How about posting some ways and means of preparing those larger cats for the dinner table, and not be simply edible, but downright delicious? I know how we do it, but I would enjoy hearing about other's procedures.
