"Tired of pork and beans as the campfire standby? Here's a recipe called "Trapper's Bean Soup," a favorite of Ed Saunier.
Put four cups water in a covered saucepan, add one medium sized diced potato, one small onion cut up fine, one tablespoon bacon fat, one-half teaspoon salt.**
Boil slowly until potato breaks down, then add a 15-OZ. can of pork and beans. Bring to a slow boil again for five minutes.
** I'd replace bacon fat with lots of chopped bacon. Then, sauté the bacon and onions together, first. This builds serious layers of flavor. In fact, I’d heavily favor smoked sausage over the bacon. - David
