JOHN;; FOR WHAT ITS WORTH;;;    I HAVE A SMALL METAL BOX;; ABOUT 10 IN LONG;; 4 INCH WIDE; HINGED LID   SMALL HOLES IN IT EVERYWHERE;; CALLED A SMOKER BOX;;;;; I PUT MY WOOD CHIPS IN IT;;  THEN PLACE ONTO THE  COALS;;;;  KEEPS THE WOOD CHIPS FROM FALLING THRU THE GRATING;  KEEPS THE CHIPS FROM JUST BURNING UP TO QUICKLY TO !  WORKS GREAT !!

In the past I've used Cherry, Oak, Alder and Hichory chips .Anxious to try the Applewood I just purchased.

Catfish, White bass, carp I guess any fish if your wanting something smokey. I never used alder before have to give it a try. When I use to smoke fish I used all applewood.

Gotta ask you guys. What other species of Fish would be good for smoking besides Trout and Salmon ? That's all I have done.Someone suggested Bluefish .Have you guys tried that?
