hi dick ,i fillet and skin them ,and put them in the grease.

My wife is Vietnamese, and since getting married I've started eating not only trout but pretty much all other fish with the heads on, even bluegill. It's just how it's done their.

But now let me really gross you out: my daughters love eating the eyes out of fried fish :-)

Nice trout there Dink. Looks like a lot of good eating there. Do you cook them with the heads on or off. I love to eat trout but I can't stand it staring at me while I'm eating it.
