John never a trout. In my younger days much younger I would catch Catfish and spear Carp with an occasional catch of White Bass . The wood of choice was apple wood cause it was free and had a desirable flavor. Use to use the small branches soak them and use them for the smoke. Gave most of the fish away at work I worked at Jeep and didn't have a problem if someone wanted some I would give them fish of there choice. I just loved doing it and giving it away was a bonus. The neighbors always knew when I was smoking fish I sent heavy smoke in all directions threw the neighborhood . Once a year some friends at work would go to Lake Michigan and fish for Salmon so I smoked there Salmon for them so I did do Salmon also and too that was apple wood.

Dick the Cherry and the alder tasted great .Got a hickory smoked Trout in the fridge.You ever smoke any other fish beside Trout?

Goes well with Whipped Cream cheese mixed with Horseradish on a stoned wheat thin cracker. Washing it down with Beer!

Apple huh ,sounds good  Dick! I smoke with Alder,Cherry,Oak or Hickory chips.I do it on top of the stove or outside on the side grill .20 -25 minutes for 10-12" Fish .Sprigs of Rosemary and or Thyme inside the fish.Tastes pretty good!Gonna have a Cherry and an Alder smoked Trout as appetizers with a few  guests today.May cook up another today using Hickory chips.

Never tried cherry but I know apple is good.
