Bluegill - Big Bluegill

Do you love big bluegill?

This is a tasty recipe but remember it generates alot of smoke so I prefer to throw my cast iron skillet on my grill........The filets are fork tender and mouth watering.......

Cayene Pepper to taste with lots of melted butter and a super hot skillet.....

That looks so good!  I love blackened fish, but haven't had much luck preparing it at home. I need to work on my technique!
