Jim-I can't get over how pink the Pickerel fillets are  from a NJ spring fed lake I fish. Much different than your white fillets1 By the way I also notice how clean cut your filets are compared to my pieces .lol .I' ll have to take more care . http://bigbluegill.com/photo/fillets-2?context=album&albumId=20...

Nice vid on the fillet techniques for pike and/or pickerel. I tell 'ya, I am a fan of pike meat...here's a 20- inch pickerel that I filleted and ate recently. along with several others. Pickerel should be 20 plus inches or so for ease of filleting. We fought over them...grand kids winning, of course! It takes a little practice, and you might mess up a couple fish before you get it down, but, hey, it's a winter option Back East for fun fishing and fillets...just ask John Sheehan!

i was going to keep the one from yesterday just over 24" but he had a sore on the other side that wouldve ruined the fillet... going out later to see if i could get some practice in. ive lost so much tackle to these guys the past few years i feel the need to thin em out! lol

We just fried up some pickerel fillets...they were very good, and I know a number of guides who actually prefer the pike to the walleye for table fare.
