Fresh Crappie is hard to beat Dick......I just made a platter for an early dinner before my BRONCOS play at Dallas.....A lot of folks here in North Carolina scale all their speckles but I fillet the majority of mine....I do scale a few smaller ones for family members that enjoy them on the bone....You know how tender and mouth watering a fresh Crappie is Dick.....I'm a fan!

Now there's some good eating. Jeffrey do you fillet yours I know some of the people I fished with in N.C. wouldn't eat a filleted fish they say the bones is where all the flaver is. Me I can't tell the difference.
