These butterflied crappie are drenched with a mixture of melted butter and Frank's buffalo sauce.......a very tasty treat in my fish cooking arsenal......

Thanks LOFR.........one of my favorite January trios includes these Butterflied Crappie along with bacon wrapped "bay" scallops and raw oysters on the half shell........that's heaven with some cold spirits!

Thanks TK.........I use smaller crappie (9 to 10 inch fish) for this process........I scale the fish and then filet both sides leaving the tail attached.......finally I cut the bone just in front of the tail and you fry the entire thing whole.........the skin on accounts for the fish rolling a bit giving it the Butterfly presentation.........finish with Franks and melted butter.......awesome.......everyone that has tried them loves them...........I've only done it with crappie
