Bluegill - Big Bluegill

Do you love big bluegill?

This is a tasty recipe but remember it generates alot of smoke so I prefer to throw my cast iron skillet on my grill........The filets are fork tender and mouth watering.......

I like the larger catfish fillets like this Allen.......high heat, butter and cajun seasonings....creates a world of smoke so I like to do it outside on a hot fire....

In my Boy Scout youth....we always served Bluegill for breakfast and I cleaned hundreds, but taught dozens of my brothers how to filet a fish.........That's one of the downfalls of an Uncle as a scout leader....he knew what skills I had at a very young age.....But fried fish was a favorite back then and I still look forward to every fish fry we host!

Yes Carl.....This recipe is with Channel Catfish but I do the same with Bluegill and creole butter......melts in your mouth my friend!

I also use the same recipe on bigger Largemouth and Striped Bass as well Jim....very tasty as well!

i think i am going for cats tomorrow after that pic jeffrey.my son turned me on to a new northern twist to this jeffrey-blackened steelhead.and yeah i tried doing it inside as the steelhead run in the winter,my wife almost killed me

I usually prepare some new potatoes or a bed of rice pilaf to land the blackened filets on and there's not a trace when I'm done.......It's popular with family guests in my house...I get a lot of requests.....It usually starts like this...." Any catfish lately Jeff?....How about some of that cajun catfish.....that sounds good!"

Thanks Lee....one of my favorites.....I see this image in my mind every time I land a nice Channel Cat.....I like to fry the smaller fish and blacken the 3 to 8 pound range.....
