I agree with you on your reply about diet dictating how a fish or animal is going to taste. Mike. I personally like all fish, but gills and the relative sunfish are on the top of my list. Yellow perch, walleyes, and crappies are delicious, but put a plate of gills, and a plate of crappies in front of me, and I will eat the gills first every time. I have eaten gar on several occasions and they real good. A good pair of tin snips will make the cleaning job a lot easier, unless the gar is going to the fish smoker. Contrary to popular belief, they are not a super bony fish.
The Chattahoochie River north of Atlanta, (cold water river) and some North Ga. mountain lakes have a good population of them. My personal best (1 lb. 10 oz) came from a Chattahoochee River backwater.

Yellow perch were stocked in the mid 1900's experimentally, but never did amount to anything. I have never seen one in OK and never have seen any present in over 30 years of ODWC sampling data. I think the yellow perch is limited to Iowa/Illinois for the southern border of its range.
I agree Vince Walleys taste like Perch .Maybe Yellow Perch are a little tastier.
Other than the size of the fillets, I can't taste the difference between Yellow Perch and Walleyes. They are really good!
If you ever ate a yellow perch you'll find the best eating fish anywhere.

Allen and Jen, Back in 1950, 51 and 52, these guys were stocked in several lakes in NE Oklahoma!!!!!!! Fairfax lake Pawhuska lake are two that I know they were stocked in!!!!! I now a guy who said he caught one a few years ago in a TROUT STOCKED LAKE near here!!!!
He kept it frozen til the BIOLOGIST came by could be some still there, course they would be about 60 years old now!!!!! :-)
Jen, we don't have them, except maybe out near the Black Mesa. Probably be better to find out the closest area that does have them, and make a road trip.
