Bluegill - Big Bluegill

Do you love big bluegill?

I don't/never keep my fish but lately been hearing thing's about how good gill's taste and I do love to eat fish. Since you alot of you guy's on site eat's Gill's I'll like do get some idea's how you guy's prepare your own Gill's. Tomorrow I'am heading out again to catch some Gill's and will keep just a few to try. I will tell you how I usually prepare my fish. (depending on what I'am eating)

1. I use Italian bread crumbs will mix it in with some crushed red pepper and old bay I use a little Vegetable oil in the pan when I'am frying.

2. If I baked it, I will heat the oven on 350 use some foil wrap my fish in with some crushed red pepper and old bay also squeeze one half lemon in with tiny bit of sage.

3. My wife makes a sauce. In a bowl, she uses a half of a lemon, some cilantro and not to sure maybe 4-5tablespoon's or teaspoon's of Mayo . Mix it in. Taste's great mainly on Salmon and Snapper.

4. Get some bread, put 2-3 fillet's (only when I baked) in one sandwich with some sauce and spicy Doritos oh just fall in love.

This is the way I usually make my fish and yes I usually Love it spicy. I'll like to hear how you guy's make your fish.

Bluegill Borduliex

8 bluegill fillets

1 large clove of garlic finely chopped

2 tablespoons olive oil

lemon pepper

Lightly brown chopped garlic in olive oil on low heat in a large teflon pan....remove from heat.

Spread garlic bits evenly, and lightly sprinkle pan with lemon pepper.

Place fillets in pan skin side up....lightly sprinkle with more lemon pepper.

Cook on medium high heat until fillets become opaque...approx 90 seconds.

Gently turn fillets, and cook for an additional 30 seconds.

Immediately plate and serve.

This recipe works best with fresh fillets....not frozen.
