When I learned how to fillet fish somewhere in my early teens… I learned two different methods from two different people with great influence in my life… first was my father… an extraordinary fisherman with great patience. His method of filleting is probably the most wide spread in use today… much like Bill Modicas video… the other method my Uncle Clare taught me was very similar to the way the electric fillet knife is used in LOFR’s method. Starting and cutting in back of the gill plate then turning the blade 90 degs and cutting thru the rib cage following the spin all the way down to the tail. I had no problem cutting thru the ribs at all with a sharp fillet knife on panfish. The fillet was then flipped over and the rib cage was then trimmed off leaving the belly meat still intact. I gave up on the latter method because it cuts thru the gut sac etc… but it seemed a tad faster.
