1st time trying this way of cleaning Perch. It will take some practice on my part but works great . Eyes and organs will be used for bait tipping .
Step 1)Facing head of fish toward you slice between skin and flesh all the way down along the dorsal fins back to end of fish .Repeat on opposite side of fish .2)With knife pull back dorsal towards head .This pulls out the double dorsal fins .3)Push your index and thumb between the skin and flesh along the sides toward the belly . 4)Snap back of head of fish and pull down towards belly and continue pulling as the skin and entrails come off the flesh and skeleton of the fish .5)Cut off tail and anal fin .

After frying in a pan with butter ,the meat  came right off the bones no problem!
