It's aquick easy way to smoke on the stove Leo .The chips go in the bottom of the pan ,then a pan filled with water on top of them and a rack in the water pan with the fish on it . Close up the cover and smoke about 20 minutes for a foot long Trout.I didn't brine or season .I use lemon when the Trout is on the plate.Sometimes I smoke with some Rosemary sprigs on the trout .
Never try this ultra fine wood chip method before. I got to try this later. Always have used a bit of larger soaked wood chips to bake for the mesquite flavoring. Learning more and more each day from masters of the kitchen as well.
