Do you love big bluegill?
Does anyone know why these aren't sold at grocery store seafood sections/seafood shops?

I would say it is mostly due to economics. The species I usually see in stores are either farm raised freshwater fish, or wild caught saltwater kinds. I believe most hatchery raised Bluegill and Crappie are destined as "stocker" fish, sold for placement in another BOW, rather than the table.
There have been, and still are, studies investigating the feasibility of raising BG strictly for consumption on a commercial scale. It all comes down to the bottom line..... grow out costs vs. profit.
