I COULD EAT!!!!!!!!! Sounds like my recipe except I use Yellow cornmeal!!!!!!!

I use white cornmeal, some flour, and a little salt and pepper, which I put in a gallon zip lock bag. Toss you fillets in and zip it closed, then tumble them till they are evenly coated.  I cook them in peanut oil on a propane cooker. We found a cast iron pot to cook them in. It holds the heat well, and it makes controlling the heat easier than with the thin walled aluminum pots that come with the cookers. I run the heat up to 380deg. and fry about 5-6 fillets at a time.They cook really quick in that hot peanut oil, then drain them on a cookie sheet covered with a couple layers of paper towels.

It's like cooking bacon Vince......hard to wait until it's all cooked! LOL.....I usually sample every batch and insist that I'm protecting friends and family from harm......
