We used to fish a very muddy place down toward San Diego, Ca and it was just full of nice sized Black Bullheads.  We fillets some and fried them up and they were delicious!  Then again,  I've caught Channel Catfish in fairly clear water that had a very muddy taste.  You could actually smell the muddy scent as they cooked.  And I know how to cook!  So I guess it's from whatever the fish have been feeding on?…

I 've heard putting filetts in a dish of milk in the fridge overnight leeches out muddy taste .Met a guy fishing for Walleye that told me that .Tried it once with Walleye and the fish tasted very good .

I wonder if you put them in a stock tank of clean water for 3-5 days if they would clean themselved out?

Rudy-
I ate these two but didn't cook them up very good. They probably would've tasted fine if a better cook than me did them up :) The Tabasco sauce saved the meal!
