Ken, some of my Buddies have made statements like " If it's got eyeballs I could fillet it " but thats not true, but yes I can do one that is 3 inches long with a pointy  knife, but I have had years of practice and I make it look easy. One time  I helped my neighbor clean out his catfish pond and spent 2 days filleting catfish with an electric knife, it's easier when you can set down to do it, and keep a 5 gal bucket for guts between your legs because all of a sudden you have become an assembly line. I prefer to slice right through the ribs  then throw the fillet into a pan of ice, and after I separate  all the fillets I then come back with a sharp regular filet blade and remove the ribs with a quick slice following the rib cage while bending the blade to do so, I can  remove the ribs with an electric knife  and do so with bigger catfish but I feel it on smaller fish like bluegill and crappy the 2 blades are to wide to make a delicate cut to save the most meat around the ribs. I have burned up 3 electric knives one summer just filleting bluegill. Electric knives come now in ac or dc and I have used both and both have their advantages. I have spoiled my family they all want fillet bluegill  but from time to time I still like to peal that thick  piece of meat off from the backbone and leave a skeleton like Fred Flintstone's comb , but this requires  taking the scales off , which can be a real chore  with a lot of fish , but that my other trick I learned how to do with a small hi-pressure washer.   LOFR
