All removed.....just backbone, fins and flesh.....I put slices in the meat to cook more quickly so the meat stays moist....See the cuts in the photo...
What about the guts and innards
i ate some with the skin lastnight tasted good still
I have never eaten the skin on catfish........different from scaled fish in my opinion.......
but you can eat the skin left on the fillet right????
got the fish in the freezer :)
