Cool Fish! In the summer up here in MD we catch their little cousins Atlantic Croakers.  Real good eating!

I'm not eating Gar..I may try that with silver carp - I don't wanna eat anything that has poison eggs in it!!

The only way I would eat a gar , it would be a big gar, they have two strips of meat on both sides of their backbone, pull them out and mix them up like you would a salmon patty or a crabcake,roll into balls like hushpuppies and fry.  CAUTION:  gar row or eggs are poisious to humans and could kill you.

Drum, silver carp , what ever you call it, cut up fillets into 1 inch pieces, drop in boiling salt water for 2 minutes , pull out and immediately rinse under cold water to stop the cooking process, dip in cocktail sauce,enjoy, poorman's lobster.

I've been told if you cut the fillets and drop them in boiling water  , they come out tasting like lobster.
