Back in Oklahoma, my catfish bait of choice was freshly-caught Shad and/or freshly-caught Skipjack. Bluegills were probably #2, although if I was after Flatheads, I preferred Green Sunnies, as they lived on the hook longer.
I did cure some chicken liver, once. I just did a salt cure, no Borax or sugar. What I did was tie the stuff up into little panty-hose pouches, then freeze the cured liver. Because of the salt, it didn't freeze solid.
