JBplus, yes they will bite and can mess you up , the one in the pic could remove your little finger or make your other ones shorter , they come out all kinds of ticked off, as for cleaning them thats the hard part ( if you ask me) you should place them alive in a clean tub of water for several days and swap out the water several times a day , that helps remove any mud/mossy taste . for dispatch use a hatchet or ax to remove the head , let them bleed out good some will hang them by the tail. its takes a good knife to seperate the top shell from the bottom ( I broke a very good hunting knife ;(  ). I just turn them loose and dont fool with them . If you have young ones with please keep them back a bit if you catch one

Perhaps it's an acquired taste...I grew up eating them, and still clean 4-5 a year.
