Most who eat them do it as filler.. Poach or roast the meat first, and then use it in Patties, fritters, or fish cakes. Smoking is sometimes recommended, too. I also know the eggs are highly regarded, something like "bayou caviar".
I'VE heard that the flesh itself should never touch water, either, from processing to cooking. Clean it dry, in other words, or it becomes "cottony." Probably folklore....

Do you eat the Bowfins?  I have recently heard they were very good eating. When I was a kid people considered them trash fish along with Gar and Sheephead. Now I'm hearing that they are all good eating.
