Don't know about Pike ,never ate one, but Pickerel the smaller members of the family, have nice pink fillets.
I hear that many upper midwest guides prefer eating sized pike to walleye in flavor and texture. John Gillespie and Pete Maina have voiced this opinion several times on their TV shows. I have eaten pike that I filleted this way and found them to be very good indeed.
