Bluegill, Pumpkinseed, Red Breasted Sunfish, Bullheads, pan sized Stream Trout, White and Yellow Perch, Crappie, a few Rock Bass, a few Green Sunfish is what I encounter. As most of the folks in this group will know, I am in South Carolina.
For warm water species, and ranked by popularity, the primary pan fish species here is kind of a tie, between bluegill, Shellcracker, and Crappie.

Coming in second are yellow perch, or “Eisenhowers,“ red breast, white perch and catfish.
I put catfish here in the second group, because, while they are very popular, pan-sized catfish are generally in the minority in terms of desirability.

Bringing up the rear, would be warmouth, green sunfish, a few scattered fliers, and assorted others like bullheads, suckers, and so on.

In cold water, it’s gonna be trout.
We have a very few walleye, sauger and even musky, but they are highly localized and most people probably don’t even know about them!

Now, there are two kinds of trout: “keepers,” and the nearly mystical, wild brook trout.
The keepers are primarily made up of rainbows, hatchery sourced,
and brown trout, likewise hatchery fish. The wild brook trout are in a class all of their own, and earn what amounts to a near hands-off status.
Anyone who keeps one of those for the pan risks the wrath of the entire upstate fly fishing community!

For me, the number one pan fish species, numero Uno is the Bluegill. I will happily pursue any Shellcracker that comes near, as well, and between the two of them they are my primary focus. But the blue gill is my single choice. In fact, I wrote an article about why you might want to make it yours. You can see that here:
