Smoked Trout is a fav of mine.
but grilled or baked with lemon and thyme or rosemary is great too .Shitake mushrooms and potatoes or scrambled eggs too

Derrick, you nailed it on the recipe. I also like mine grilled on the open flame, and cover the body continually with olive oil infused with fresh Italian basil, thyme, and oregano, with lemon pepper. Stuff the center with minced garlic and line sliced sweet onion. My family gobble them up faster than I can put them on the table. I always hide one for myself. Smoke and crunchy on the outside, soft ans succulent on the inside.

or if you want to give it a earthy flavor use the mushrooms.

clean out their guts wrap them in foil. season the outside with whatever you like. Keep the fish whole. Spread lemon inside of the cavity after gutting the take a fresh piece of lemon lay that in side . Wrap it back up and then grill.
