Pros and cons to bone in or bone out?
I'm a fillet guy.
If I do happen to keep a fish I fillet everything. The worst fish for me is northern Pike with the Y bone I don't have that down very well.
When I do big Pickerel I get three boneless filets .The top, and two back sides toward the tail .You're right the two front sides have many bones so I just put them in a blender and make fish cakes with them.
Fillet when possible, practical and desired.
Or dont and eat em the old fashioned way... rolled in seasoned meal or crumbs and fried.
