Julia Child taught me that for the CRISPIEST gills,one uses only the egg white,saving the yolk for a nice Bearnaise sauce or somesuch. Yolk is oil-soluble and therefore allows the fry oil to enter the food,where egg white is water soluble.and keeps the oil out. Will try your Cheesy-Poofs method asap,however!

Sharon, forget the cheese curls (don't see how you can, they are everywhere) and get some cheeze-its. Little tiny crackers. Crush them up fine. Make a liquid mixture of milk and eggs. Dip the fish (filets are best) in the liquid, then the cheeze-it crumbs. Drop in grease.<br />

I am NOT a cook, I have Not tried this. It just came to me in a vision a moment ago. I may be "channeling" just for you. Anyway, I want you to try it and report back to us.
